@iliveinmykitchen’s Almond Flour Plum Galette (gluten-free)

INGREDIENTS

1 cup almond flour 

1/2 cup coconut flour (or GF flour) 

1/2 cup coconut sugar 

1/2 tsp baking powder

1 egg 

3 tablespoons olive oil (or coconut oil)

½ teaspoon vanilla extract

3 large plums, approx 1 1/2 cups of chucks or sliced (you can also use strawberries, peaches, nectarines, apricots, or apples)

thinly sliced almonds (optional)

vanilla ice cream (optional)

METHOD

Preheat your oven to 350 degrees F.

Line a baking sheet with parchment paper.

In a large bowl, combine almond flour, coconut flour, coconut sugar, baking powder, egg, oil, and vanilla extract. Use your hands to form the dough into a bowl. Set to the side.

Cut your fruit. You can toss it with a little freshly squeezed orange juice if you like.

Place the ball of dough onto the parchment-lined baking sheet and use your hands to press the dough into an ~12-inch disc (head to @iliveinmykitchen instagram or tiktok to see how she shapes the dough).

Add the fruit into the center of the disc, leaving a 2-inch border.

Then use the parchment paper to fold the edges of the dough on top of the fruit. If you want to add sliced almonds, brush the dough with some egg wash (egg whisked with a splash of water) and sprinkle the almonds on top.

Bake in the oven for 20 minutes, or until golden brown.

Top with ice cream!
