White Fish with Lemon, Olives, and Radicchio and Broccoli Pasta

FISH INGREDIENTS 

white fish filets, such as cod or halibut (I used Vital Choice cod)

fine grain sea salt

pepper

garlic powder

red chili flake

olive oil

lemon slices

kalamata olives, halved

radicchio, sliced

parsley, chopped


FISH METHOD

  1. Preheat oven to 450 degrees F and line a baking sheet with parchment paper. 

  2. Place radicchio on baking sheet. Season with olive oil, salt, and pepper and toss.

  3. Make room for the fish and add filets on baking sheet. Season with salt, pepper, garlic powder, and chili flakes. Drizzle with olive oil. Top with lemon slices. Scatter olives. Bake in the oven for 12-20 minutes, depending on the thickness of your fish, or until internal temperature is 145 degrees F.

  4. Remove from oven and garnish with parsley.

PASTA INGREDIENTS 

pasta of your choice, I used Jovial brown rice pasta

kosher salt

broccoli florets and stems

olive oil

lemon

salt

pepper

parsley, chopped


FISH METHOD

  1. Bring a large pot of water to a boil and season with salt.

  2. Add pasta and cook until al-dente. Then, add in your broccoli and let it cook for 1-2 more minutes.

  3. Drain pasta and broccoli and return to the same pot. Drizzle olive oil, squeeze lemon, and season with salt and pepper. Toss. Taste and adjust for seasoning.
