Dreamy Baked Potato

Baked potato served with sliced heirloom tomatoes, my chimichurri, flakey sea salt, and freshly cracked black pepper

INGREDIENTS

2 medium Russet potatoes, scrubbed clean

1 teaspoon unsalted butter or olive oil

Salt

Optional toppings: sliced tomatoes, my homemade chimichurri, sour cream, flakey sea salt, freshly cracked pepper, broccoli, fresh chives, herbs, parmesan

METHOD

Preheat oven to 425 degrees

Poke potatoes all over with a fork and place on a parchment-lined baking sheet or 13 x 9-inch baking dish

Rub butter or oil evenly on potato and sprinkle generously with salt

Bake for 45-50 minutes, until potato is cooked through and fluffy

Split down the center and serve immediately with toppings of your choice
