Anything Goes Bliss Bar

INGREDIENTS

1 1/4 cup rolled oats

1 tablespoon chia seeds

2 tablespoons pumpkin and/or sunflower seeds

1 tablespoon cacao nibs

3 tablespoons maple syrup

Splash of vanilla extract

1/4 cup dried cherries (or dried strawberries or cranberries)

5 tablespoons peanut butter (any nut/seed butter works - I like to warm it up in the microwave with a touch of coconut oil to loosen it up a bit)

Sprinkle of cinnamon

Dash of salt

Melted dark chocolate (optional)

Flakey sea salt (optional)

METHOD

  1. Combine all ingredients in a large bowl.

  2. Roll into balls or press into a 8x8 pyrex.

  3. Chill in fridge for at least 2 hours before drizzling with melted chocolate and flakey sea salt.

  4. If you made it in the pyrex, you can also break it up into clusters after it has set in the fridge. I then place the clusters into a large plastic bag and spoon in melted chocolate. Seal the bag and shake. Pour the clusters onto a parchment-lined plate or baking sheet and freeze.
