Lemon-Herb Butter Beans

INGREDIENTS

1 can butter beans/white beans/chickpeas (I like Eden Food beans)

squeeze of lemon

chopped herbs such as parsley, basil, and/or dill

salt

pepper

red chili flakes

METHOD

  1. Drain beans and rinse with water.

  2. Combine beans, lemon, herbs, salt, pepper, and chili flakes in a bowl and toss.

  3. I served it with Siete almond flour tortilla, steamed spinach and green beans, tomato, and avocado.
