Caramelized Skillet Stone Fruit
INGREDIENTS
1.5 tablespoons unsalted butter or coconut oil
3 stone fruits such as peaches, plums, and/or nectarine, sliced into big pieces
1 tablespoon or more coconut/brown sugar or maple syrup/date syrup/honey
cinnamon
vanilla extract
vanilla ice cream (optional)
granola, crumble topping, or toasted coconut flakes (optional)
flakey sea salt (optional)
METHOD
Melt butter in a large skillet over medium-high heat. Add in sugar and cook for another minute.
Add stone fruit and cook, stirring occasionally, until caramelized. Once the fruit start to become golden, sprinkle in cinnamon and add a splash of vanilla.
Serve immediately over ice cream and with toppings of your choice. Enjoy!
