Chicken Pesto Sandwich

INGREDIENTS

2 slices of your favorite regular or gluten-free bread (can also use pita or a tortilla)

Homemade or store bought pesto

Cooked and sliced chicken (I used boneless skinless chicken thighs)

Shredded cheese such as mozzarella or havarti 

2-3 slices of fresh tomato or sun dried tomato

Arugula 

Lemon juice

METHOD

  1. Lightly toast both slices of bread. 

  2. Spread pesto on each slice,

  3. Top one slice with chicken and cheese and place in the toaster oven/oven to melt the cheese and warm the chicken.

  4. Dress the arugula with lemon juice, salt, and pepper. 

  5. Add the arugula and tomato on top of the chicken. 

  6. Place the other slice of bread on top and lightly press down.
