Chocolate Clusters

INGREDIENTS

chocolate (I either do all dark chocolate or a mix of dark and semi-sweet chocolate; I love Enjoy Life Food brand of chocolate chips)

roughly chopped nuts, such as hazelnuts, pistachios, walnuts, almonds

pumpkin seeds

dried cherries and/or cranberries

freeze-dried raspberries and strawberries

flakey sea salt

METHOD

  1. In a medium-large sized bowl, melt chocolate using a microwave or a double boiler. If chocolate is very thick, add a touch of coconut oil to help loosen it up as it melts.

  2. Remove the bowl from the heat and add in nuts, seeds, cherries/cranberries, and freeze-dried fruit. Mix until all the add-ins are coated with chocolate.

  3. Line a baking sheet with parchment-paper. Use two forks to form clusters onto the baking sheet. Garnish with freeze-dried fruit (optional).

  4. Refrigerate for 10 minutes and then sprinkle with flakey salt. Refrigerate/freeze until cluster has set. Enjoy!
