Chocolate Peanut Butter Fudge Balls

makes ~16 balls

INGREDIENTS

1/4 cup chopped chocolate or chocolate chips (i used dark chocolate)

1/2 cup peanut butter butter (almond butter or tahini would also be delish)

1.5 tablespoons or more maple or date syrup

Splash of vanilla extract

2 teaspoons cacao powder

dash of salt

1/2 cup finely chopped nuts (i used pecans)

2-3 teaspoons cacao nibs

Finely shredded coconut for rolling

METHOD

  1. Melt the chocolate in the microwave or using a double boiler.

  2. Off the heat, add nut butter, maple syrup, vanilla extract, cacao powder, and salt to the bowl. Mix well.

  3. Then, stir in the nuts and cacao nibs. Once thoroughly combined, taste and adjust for sweetness.

  4. Line a baking sheet with parchment paper and fill a small bowl with the shredded coconut. Roll the dough into balls, roll around in the coconut, and place on the baking sheet. Refrigerate or freeze. Enjoy:)
