Chocolate Strawberry Bliss Balls
makes ~16 balls
INGREDIENTS
1 cups cashews and/or walnuts
6 medjool dates
½ cup freeze-dried strawberries
Water/plant-based milk
2 heaping teaspoons cocoa powder
2 heaping teaspoons cacao nibs
Sea salt
METHOD
For the strawberry flavor: in a food processor, pulse ½ cup cashews until it forms a crumb. Add in 3 dates and freeze dried strawberries. Add in ½ tablespoon or more of milk or water and pulse until the mixture comes together. Transfer to a bowl and set to the side.
For the chocolate flavor: in a food processor, ½ cup pulse cashews until it forms a crumb. Add in 3 dates, cacao powder, cacao nibs, and salt. Add in ½ tablespoon or more of milk or water and pulse until the mixture comes together. Transfer to a bowl and set to the side.
Form the balls: take about 1 teaspoon of the strawberry dough and roll into a ball. Repeat with the chocolate dough. Then, smoosh the two balls together and roll into one ball. Repeat with remaining dough. Store the bliss balls in the fridge and enjoy throughout the week!
