Chocolate Strawberry Snacking Granola

INGREDIENTS

3 cups rolled oats 

1/3 cup coconut flakes

1/3 cup pumpkin seeds 

1/4 cup walnuts

2 tablespoons chia seeds

1/4 cup coconut oil

1/3 cup maple syrup

5 tablespoons cacao powder

1 teaspoon cinnamon 

2 teaspoons vanilla extract

1 teaspoon salt

1/2 cup semi-sweet or dark chocolate chips

1 bag freeze dried strawberries 

METHOD

Preheat oven to 300 degrees. In a food processor, pulse oats, seeds, coconut, and walnuts. This is optional but will make your granola more clustery.

In a bowl, whisk coconut oil, maple syrup, and vanilla until well combined.

Pour oat mixture into a large bowl and add chia seeds, cacao powder, cinnamon, and salt. Combine.

Add wet mixture to the oats and mix everything together.

Spread out granola on a parchment-linked baking sheet and bake for 20-30 minutes, stirring half way. 

Turn the oven off. Pour chocolate chips over the granola and place baking sheet back into oven for another 30 minutes or until the chocolate softens.

Remove granola from oven and add strawberries (I pulsed them in the food processor). Mix everything together and then let the granola sit until cooled and clusters form. 

Store in fridge or freezer.
