Coconut Butter Bliss Balls

makes about 12 small bliss balls

INGREDIENTS

6 medjool dates

2 tablespoons dried tart cherries

1/2 cup nuts (I did 1/4 cup walnuts and 1/4 cup pecans)

1 tablespoon ground flaxseed (or chia or hemp seed)

2 tablespoon pumpkin seed (or sunflower)

2 tablespoon melted/runny coconut butter 

1 teaspoon vanilla extract 

salt

cinnamon

1 tablespoon cacao nibs

METHOD

  1. in a food processor, blend dates, cherries, nuts, flaxseed, pumpkin seed, cinnamon, pinch of salt, as much cinnamon as you like, and vanilla. process for 2-4 minutes.

  2. taste and adjust. depending on how sweet you like it, add a drizzle of honey or maple. add in cacao nibs and pulse. when you squeeze the mixture in your hand, it should hold together. if not, blend more or add a splash of water.

  3. roll into balls. you can drizzle with melted chocolate or coconut butter! and sprinkle with flakey salt. 

  4. store in fridge and enjoy:)
