Coconut-Chia Oatmeal with Sautéed Cinnamon Apples

INGREDIENTS

1/2 cup rolled oats

1 tablespoon chia seeds

1 cup coconut water (or water and then sweeten oatmeal with maple syrup or honey)

splash of vanilla extract

cinnamon

1-2 spoonfuls coconut yogurt (such as Cocojune)

coconut oil

1 large apple, diced

flakey sea salt

toppings: banana, golden kiwi, cacao nib, hemp seed


METHOD

  1. Heat up 1 tablespoon of coconut oil in a pan. Add diced apple and sauté until golden. Sprinkle with cinnamon and a touch of flakey sea salt. Cook until apples are tender.

  2. In a small pot, place oats, chia seeds, coconut water, vanilla, and cinnamon. Stir and bring to a simmer. Cook until oats are tender, stirring frequently. If too thick, add more liquid. Once cooked, add coconut yogurt and stir. Taste the oatmeal and see if it needs additional sweetness. To sweeten, I like to add mashed banana or maple syrup.

  3. Place oatmeal in a bowl and top with sautéed apples and toppings of your choice. Enjoy!
