Mast-o-Khiar (Cucumber Yogurt)

INGREDIENTS

3 persian cucumbers, grated with a mandolin or diced

3/4 cup diced tomato (I used grape tomatoes)

1/4 of a red onion, finely diced

16 oz plain whole milk yogurt

chopped mint (as much as you like)

chopped dill (as much as you like)

lemon juice (as much as you like)

salt (start with 1/2 teaspoon, but you will likely need more)

pepper

METHOD

In a large bowl, combine all the ingredients. Taste and adjust for seasoning.
