Five-Minute Silken Tofu with Sticky Rice

INGREDIENTS

1 package silken tofu, drained 

2 tablespoons soy sauce 

1 tablespoon coconut aminos

3/4 teaspoon rice vinegar 

1.5 teaspoons sesame oil

1/4-1-2 teaspoon harissa 

Sliced green onion

Spoonful sesame seed 

1/2 cup sticky rice, soaked for 20-30 minutes 

METHOD

  1. In a bowl, whisk together soy sauce, coconut aminos, rice vinegar, sesame oil, harissa, green onion, and sesame seed. Taste and adjust for seasoning.

  2. Place tofu in a shallow bowl and pour marinade over tofu. Let it sit while you prepare the rice.

  3. Place rice in a small pot and rinse well three times. Drain the water. Add 3/4 cup filtered water. Bring to a boil and then lower to a simmer. Cover and cook for 10 minutes. Remove from the heat and let the rice sit for 15 minutes with the lid on. Remove the lid and fluff.

  4. Serve tofu with rice and greens.
