Garlicky White Beans & Kale

serves 3-4

INGREDIENTS

1 head lacinto kale, washed, de-stemmed, and roughly chopped

½ of a large red onion, thinly sliced 

½ of a fennel bulb, thinly sliced

1 T olive oil

3 cloves of garlic, thinly sliced

Red pepper flakes

¾ cup cherry tomatoes, cut in half

15-oz can of white beans like eden foods, drained and rinsed with water

Juice from half a lemon

Chopped basil

Grated parmesan (option)

Salt and pepper to taste

METHOD 

Heat large sauté pan over medium heat and add onion and fennel (no oil). Sauté until onion and fennel become translucent (~ 5 min)

Add 1 T olive oil, garlic, and a big pinch of red pepper flakes to the pan. Season with salt. mix and sauté for another 3-4 minutes. 

Add chopped kale, white beans,  and tomatoes to the pan. Stir

Add juice from half a lemon, lots of pepper, and salt. 

Top with chopped basil and grated parmesan
