Greek Avocado Toast

INGREDIENTS

1 slice of bread (regular or gluten-free), toasted

1/2 large avocado, mashed with sea salt

1 persian cucumber, diced

1/4 cup grape or cherry tomatoes, quartered

4 kalamata olives, quartered

1-2 tablespoons crumbled sheep’s or goat’s milk feta (omit to make vegan or use a vegan alternative)

Red wine vinegar

Olive oil

Dried oregano

Sea salt

Pepper


METHOD

  1.   In a bowl, combine diced cucumber, tomatoes, olives, and feta.

  2. In a separate smaller bowl, whisk together red wine vinegar, olive oil, oregano, salt, and pepper. Taste and adjust for seasoning.

  3. Pour dressing over the salad and toss well. Taste and adjust.

  4. Spread mashed avocado over the toast and then top with some of the salad. Enjoy:)
