Green Beans with Pistachio Gremolata

INGREDIENTS

1 package French green beans

kosher salt

1/4 cup shelled pistachios, roughly chopped

1/2 cup finely chopped herbs such as parsley and cilantro

zest of a lemon

juice from 1/2 lemon

2 tablespoons olive oil

2 small clove of garlics, minced

red chili flakes

fine grain sea salt salt

pepper

METHOD

  1. Add chopped pistachios to a dry pan and lightly toast. Remove from heat and then chop more.

  2. Add pistachios to a bowl along with the herbs, lemon zest, lemon juice, olive oil, 1/2 of the minced garlic, chili flakes, salt, and pepper. Stir. Taste and adjust for seasoning.

  3. Bring a large pot of water to a boil and season with kosher salt. Drop green beans and blanche for a few minutes (you want them to still be al dente).

  4. Drain. In the same pot, add a tablespoon of olive oil, the remaining garlic, and a pinch of chili flakes. Cook on very low heat for few minutes until the garlic becomes fragrant. Toss in the green beans, a squeeze of lemon, salt, and pepper.

  5. Place green beans on a platter and spoon the gremolata on top. Enjoy!
