Green Goddess Dip with Crudités

Insanely delicious as a dip with beautiful vegetables, as a dressing on crisp salad, or to drizzle on roasted salmon or chicken

Insanely delicious as a dip with beautiful vegetables, as a dressing on crisp salad, or to drizzle on roasted salmon or chicken


INGREDIENTS

1/2 cup whole milk greek yogurt

1.5 cups mixed soft herbs (I used parsley, basil, tarragon, dill, mint, and chives)

2 tablespoons lemon juice

2 anchovy fillets or 1 teaspoon anchovy paste (or you can use 1 teaspoon of capers)

1 large clove of garlic

1/3 cup olive oil

Dash of red chili flakes

1/2 - 3/4 teaspoon salt

1/4 teaspoon pepper

METHOD

Combine all ingredients into a vitamix or food processor. Pulse until well combined. Taste and adjust for seasoning.

Serve with raw vegetables (endive, little gems, carrots, cucumber, radish, jicama, tomato, snap peas) and/or cooked vegetables (roasted potatoes/sweet potatoes, blanched broccoli/cauliflower/green beans), toasted bread, crackers
