Grilled Summer Zucchini + Corn with Stracciatella + Basil

INGREDIENTS

Baby zucchinis and/or squash, halved lengthwise

Fresh corn

Olive oil

Fine grain salt

Pepper

Stracciatella cheese or burrata (omit to make vegan)

Fresh basil and/or mint, torn

Flakey sea salt

Red chili flakes

METHOD

  1. Preheat the grill.

  2. While the grill gets hot, place zucchini in a large bowl and toss with oil, sea salt, and pepper. Coat corn with oil and season with salt and pepper.

  3. Grill corn and zucchini and until lightly charred.

  4. Set zucchini to the side and remove the corn kernels from the cob (I like to stand the corn up in a bowl so the kernels don’t fly everywhere).

  5. Arrange zucchini and corn kernels on a plate.

  6. Dollop with stracciatella. Drizzle with a bit more oil. Season with flakey salt, pepper, and chili flakes. Garnish with herbs. Enjoy!
