Herby White Bean Tacos
serves 3
FOR THE DRESSING
1 small shallot, finely chopped
1 T dijon mustard
1-2 t of pure maple syrup or honey (depending on how sweet you like it)
2 T apple cider vinegar
2 T red wine vinegar
½ cup - ¾ cup extra-virgin olive oil
¾-1 t sea salt
Pepper
FOR THE BEANS
1 can of white beans - I like eden foods (link), you can also use beans cooked from scratch.
1-2 stalks of celery, diced
1 small cucumber, diced
Handful of fresh herbs like parsley, basil, and dill, finely chopped
Salt and pepper to taste
METHOD
Prepare the dressing in a jar
If using canned beans, drain the liquid and rinse the beans thoroughly with water
Place rinsed beans, celery, cucumber, and herbs in a bowl
Add some dressing
Let it marinate for 5 minutes (optional)
Taste for seasoning and add salt and pepper if necessary
Serve on top of salad greens or a tortilla (I like foodforlifebaking sprouted corn tortillas with arugula). Avocado and/or tuna would be great additions
