Layered Chocolate Banana Bread
INGREDIENTS
FOR THE FIRST LAYER:
2 small bananas
1 cup almond flour
1 egg
splash of vanilla extract
1/4 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
FOR THE CHOCOLATE LAYER:
1 banana
1 egg
1/2 cup almond flour
3 tablespoons cacao powder (i used @navitasorganics)
1/4 cup coconut sugar
1/4 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
top with chocolate chips, cacao nibs, and chopped walnuts
METHOD
preheat oven to 350 degrees F. line a loaf tin with parchment paper for easy removal of banana bread.
make the first layer: in a bowl, mash two bananas. add in the egg and vanilla and whisk well. add in almond flour, baking powder, baking soda, and salt. mix. pour into loaf tin and spread into an even layer.
make the chocolate layer: in the same bowl, mash a banana. add in an egg and vanilla. whisk well. add almond flour, baking soda, baking powder, salt, cacao powder, and coconut sugar. mix well. pour into loaf pan and spread over the first layer.
sprinkle chocolate, cacao nibs, and walnuts over the top.
bake in the oven for 45-55 minutes or until knife comes out clean.
allow to cook completely before removing from loaf pan.
once cooled, remove from pan and slice. enjoy:)
store in a glass container in the fridge or freeze!
