Lemon-Scallion Salmon

INGREDIENTS

~3 pounds of salmon

2 tablespoons olive oil

2 lemons

2 scallions, sliced

Honey

Calabrian chili or red chili flakes to taste

Fine grain sea salt to taste

Black pepper to taste

METHOD

  1. Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper.

  2. Cut one lemon in half and use your know to remove the skin and white pith. Then, chop the peeled lemon into small pieces. Transfer to a bowl along with the olive oil, juice from half a lemon, chopped scallion, a drizzle of honey, and Calabrian chili or red chili flakes to taste. Mix.

  3. Place your salmon on the baking sheet and pat dry with a paper towel. Season generously with salt and pepper. Pour the lemon-scallion mixture over the salmon and spread in an even layer.

  4. Roast the salmon for 15-20 minutes or until cooked to your liking. I like to broil the salmon for the last few minutes. Enjoy!
