Maple-Cinnamon Protein Oatmeal
INGREDIENTS
Heaping ¼ cup rolled oats
1-2 teaspoons chia seeds
½ cup coconut water or milk
½ cup water
2-3 egg whites
Maple syrup/honey
Cinnamon
Fruit of your choice such as berries, banana, and/or stone fruit
Hemp seeds and/or cacao nibs
METHOD
Add oats, coconut water, water, and salt to a small pot. Bring to a simmer and then turn the heat to low. Cook until oats are soft, mixing often and add more liquid if the oats thicken too much.
Stir in plenty of cinnamon and the egg whites and mix vigorously. Cook for 2-3 more minutes. Taste and adjust.
Transfer to a bowl and top with more cinnamon, a drizzle of maple syrup or honey, fruit, nut butter, and hemp seeds/cacao nibs. Enjoy!
