Citrus-Marinated Castelvetrano Olives

INGREDIENTS

1 cup castelvetrano olives

1/4 cup olive oil

red chili flakes

2 strips of lemon zest

1 strip orange zest

squeeze of lemon juice

small squeeze orange juice (optio

thyme/rosemary

salt

pepper

METHOD

Heat olive oil in a small saucepan. Add in chili flakes, lemon zest, orange zest, thyme/rosemary, and salt and pepper to taste.

Stir in olives and sauté until warmed through.

Off the heat, squeeze a tiny bit of orange and lemon juice (not too much!)

Taste and adjust for seasoning.
