INGREDIENTS

Romaine lettuce, thinly sliced
Dill, chopped
Scallion, thinly sliced (optional)
Sheep’s milk feta, crumbled
2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
Sea salt and black pepper to taste

METHOD

  1. In a bowl or mason jar, combine 2 tablespoons lemon juice, 2 tablespoons olive oil, salt, and pepper. Whisk or shake well.

  2. Place lettuce, dill, scallion, and feta in a bowl. Add some dressing and use your hands to massage the dressing into the ingredients. Taste and adjust for seasoning. Enjoy!
