Mediterranean Quinoa Salad

INGREDIENTS

cooked quinoa (I did a combo of white and red quinoa)

sliced cucumber 

diced tomato

kalamata olives, cut into fourths 

scallion, finely chopped or red onion, finely diced 

chopped herbs (I did basil and cilantro; parsley and dill would also be delicious)

lemon juice 

olive oil 

salt 

pepper 

METHOD

  1. in a bowl, combine cooked quinoa, cucumber, tomato, olives, onion if using, and herbs.

  2. squeeze lemon and drizzle olive oil. season with salt and pepper.

  3. mix well. taste and adjust for seasoning. enjoy:)
