Mediterranean Quinoa Salad
INGREDIENTS
cooked quinoa (I did a combo of white and red quinoa)
sliced cucumber
diced tomato
kalamata olives, cut into fourths
scallion, finely chopped or red onion, finely diced
chopped herbs (I did basil and cilantro; parsley and dill would also be delicious)
lemon juice
olive oil
salt
pepper
METHOD
in a bowl, combine cooked quinoa, cucumber, tomato, olives, onion if using, and herbs.
squeeze lemon and drizzle olive oil. season with salt and pepper.
mix well. taste and adjust for seasoning. enjoy:)
