My Favorite Overnight Oats

serves 4

INGREDIENTS

1 1/2 cup old-fashioned rolled oats

1/4 cup buckwheat groats

3 tablespoons chia seed

3 tablespoons pumpkin seeds

2 tablespoons goji berries

1 tablespoon cacao nibs

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 apple/pear, diced

1-1 1/2 oranges, juiced (depending on how citrusy you like it)

1 1/2 cups kefir or plain yogurt

1 1/2 cups coconut water

METHOD

Combine all ingredients into a glass airtight container.

Stir well and store in fridge overnight.

In the morning, adjust consistency by adding more liquid (kefir, coconut water, almond milk) if necessary. Add desired toppings such as sliced banana, apple, pear, berry sauce, pomegranate seeds, coconut flakes, nuts or nut butter!
