Quinoa Oatmeal

INGREDIENTS

1/2 cup rolled oats

2 tablespoons quinoa

1 tablespoon chia seed

1 tablespoon hemp seed

1 tablespoon goji berry

1/2 ripe banana, sliced

cinnamon

fine grain sea salt

1 teaspoon vanilla extract

water

coconut water

almond milk

toppings: fruit, nut butter, ground flaxseed, cacao nib, coconut flakes

METHOD

In a small pot, combine oats, quinoa, chia seed, hemp seed, goji berry, banana, vanilla, salt, cinnamon, 1/2 cup water, 1/2 cup coconut water, and 1/2 cup almond milk. Bring to a boil and then lower to a simmer. Use a fork to mash the banana.

If it’s too thick, add more liquid. Once oats are tender and everything has thickened, taste and adjust.
