Chopped Salad with Radicchio, Olives, + Feta

INGREDIENTS

Little gem lettuce or romaine, thinly sliced

Radicchio, thinly sliced

Sungold or cherry tomatoes, halved

Persian cucumber, peeled (optional) and diced

Castelvatrano or Kalamata olives, halved

Fresh herbs such as mint, basil, dill, and/or parsley, finely chopped

Chickpeas or white beans (optional)

Feta, crumbled

Dressing of your choice (I eyeballed red wine vinegar, apple cider vinegar, olive oil, dijon mustard, maple syrup, oregano, salt, and pepper)

METHOD

  1. In a bowl, combine lettuce, radicchio, tomato, cucumber, olives, chickpeas/beans (optional) and herbs. Toss with dressing. Top with feta and more herbs. Serve with protein of your choice and enjoy!
