Roasted Artichoke Hearts with Lemon and Chili

INGREDIENTS

jarred/canned artichoke hearts, drained, rinsed, and patted dry (or thawed frozen artichoke hearts)

olive oil

salt

pepper

red chili flakes

lemon half


METHOD

  1. Preheat oven to 450 degrees.

  2. Place artichoke hearts on a baking sheet. Toss with plenty of olive oil, salt, pepper, and chili flakes.

  3. Place artichoke hearts cut side down. Roast in the oven for 25-30 minutes. Place lemon half cut side down on baking sheet. Roast for another 10 minutes (add more oil if the artichoke is not golden brown).

  4. Remove from oven and immediately squeeze lemon all over. Enjoy!
