Salmon with Saffron + Lemon

INGREDIENTS

~3 pounds of salmon

Olive oil

1/4 teaspoon or more of ground saffron

Fine grain sea salt to taste

Black pepper to taste

1 lemon

METHOD

  1. Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper.

  2. Place your salmon on the baking sheet and pat dry with a paper towel. Drizzle with olive oil and sprinkle with the ground saffron. Use a silicone brush to distribute the saffron. Then, generously season with salt and lemon. Squeeze half of the lemon over the salmon.

  3. Roast the salmon for 15-20 minutes or until cooked to your liking. I like to broil the salmon for the last few minutes.

  4. Finish with a squeeze of lemon (optional) and enjoy!
