Salmon Tacos with Cucumber-Cilantro Salsa and Spicy Aioli

INGREDIENTS

Cooked salmon (season however you like! simply with salt and pepper or spiced up with paprika and chili powder)

Siete cassava tortillas

Sautéed greens such as kale, spinach, or swiss chard

persian cucumber, diced

cilantro, chopped

lime juice

1/2 lemon, rind removed and diced

salt

pepper

Primal Kitchen Avocado Oil Mayo

Hot sauce of your choice

METHOD

Prepare salsa by placing chopped cucumber, cilantro, lime juice, lemon segments, salt, and pepper in a bowl. Mix well.

In a small bowl, combine about 1 tablespoon of the mayo with a few splashes of hot sauce. Add a splash of water or lime juice to thin it out slightly.

Toast your tortilla and top with greens, salmon, salsa, and aioli. Enjoy!
