Satisfying Salad with Buttered Turmeric Quinoa

INGREDIENTS

salad greens such as spinach, arugula, radicchio, romaine, endive, butter lettuce, frisee

raw vegetables such as cucumber, carrot, radish, celery

cooked vegetables such as broccoli, green beans, kale

fresh herbs such as cilantro, dill, mint, basil, parsley

grain such as turmeric quinoa (recipe below), rice, farro

protein such as egg salad, lentils, chickpeas, edamame, chicken, salmon, tuna,

fat such as pumpkin seeds, hemp seeds, avocado, olive oil, nuts

METHOD

  1. In a pot, add 1/2 cup white quinoa. Rinse well and then add 1/2 cup plus 2 tablespoons filtered water, a sprinkle of turmeric, pepper, and 1/2 tablespoon salted butter (or unsalted and then add salt to quinoa). Mix. 

  2. Bring to a boil and then lower to a simmer. Once most of the water has evaporated, place the lid on the pot and cook for another 5-10 minutes or until quinoa is cooked through. Fluff with a fork and enjoy!
