Stovetop Snap Peas and Asparagus with Lemon and Mint

INGREDIENTS

asparagus, cut into 2-inch pieces
snap peas (washed ones from Trader Joe’s are convenient)
red onion, thinly sliced
garlic, finely chopped or garlic powder (optional)
red chili flakes
olive oil
lemon juice
lemon zest
mint
salt
pepper
parmesan (optional)


METHOD

Heat up oil in a large sauté pan. add red chili flakes and onion and sauté until translucent.


Throw in the garlic or garlic powder and cook for a few minutes.
Add asparagus, snap peas, and lemon juice. cook until al-dente.

Finish with torn mint, lemon zest, salt, pepper, and parmesan if you’d like
