Tofu, Cabbage, and Spinach Stir-Fry

INGREDIENTS

14 oz package of extra-firm tofu, drained

olive oil

2 large cloves of garlic, finely chopped

1-in knob of ginger, finely chopped (optional)

2 green onions, chopped

red chili flakes

1/2 head of green cabbage, thinly sliced

2-3 big handfuls of spinach

salt

pepper

1 tablespoon soy sauce or tamari

1 tablespoon coconut aminos

juice from 1/2 lime

1 tablespoon mirin

1 teaspoon or more sesame oil

sesame seeds

cilantro, chopped

METHOD

  1. Press tofu for at least 15 according to these instructions.

  2. While tofu is being pressed, heat up enough oil to coat a large skillet. Then, add in green onion, garlic, ginger, and chili flakes. Sauté on low-medium for one minute.

  3. Add sliced cabbage and sauté until soft.

  4. Add spinach and season with salt and pepper.

  5. When tofu is done, use your hands to crumble tofu blocks into small pieces. Toss tofu into the pan. Add soy sauce, coconut aminos, lime juice, mirin, and sesame oil. Add sesame seeds and cilantro. Mix.

  6. Serve with rice. Enjoy!
