Tomato-Basil Bruschetta

These marinated tomatoes are delicious over toasted baguette, hummus/white bean dip, avocado toast, steamed artichoke, or tossed with pasta

INGREDIENTS

~2 cups or more tomatoes, diced (i used cherry tomatoes)

1 large clove of garlic, minced or grated 

4-5 large basil leaves, julienned

drizzle of balsamic vinegar 

drizzle of good extra virgin olive oil

lemon juice 

salt

pepper

chili flakes

sliced baguette 

hummus or white bean dip (optional)

METHOD

  1. preheat oven to 400 degrees F and line a baking sheet with parchment paper.

  2. in a bowl, combine minced garlic, diced tomatoes, julienned basil, balsamic, olive oil, squeeze of lemon, salt, pepper, and chili flakes. mix well. chill in the fridge (I let mine marinade for a few hours).

  3. arrange sliced baguette on the parchment-lined baking sheet. brush both sides of each baguette with olive oil. sprinkle the top with salt. bake in the oven for 10-15 minutes or until slightly golden.

  4. serve the crostini with the marinaded tomatoes and spread of your choice (optional). enjoy!
