Apple Crumble Muffins (vegan, gluten-free)

makes 6 muffins

INGREDIENTS

1/2 cup almond flour

1/3 cup rolled oats

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup diced apple 

1 flax egg (combine 1 tablespoon ground flax with 2.5 tablespoons water, mix, and let sit for 5 minutes)

1.5 ripe large banana, mashed

1 tablespoon maple syrup (these muffins aren’t very sweet so if you like things on the sweeter side, add an additional tablespoon of maple)

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

Orange zest (optional)

1/4 cup chopped walnuts 

Eat Seedly crumble or granola

METHOD

  1.  Preheat the oven to 350 degrees F and line a muffin tin with liners.

  2. In a large bowl, combine mash your banana and then add maple syrup, coconut oil, vanilla, and flax egg. Stir well.

  3. Into the wet ingredients, add almond flour, oats, cinnamon, salt, baking soda, and orange zest (if using). Mix. Then, add apples and walnuts. Mix again.

  4. Use a cookie scoop or spoon to transfer batter into muffin tin. Sprinkle some crumble/granola over each muffin.

  5. Bake in the oven for 20-25 minutes and then cool. Enjoy!
