Crispy Cacio e Pepe Potatoes

INGREDIENTS

1 russet potato, scrubbed well and cut into cubes 

kosher salt

2-3 tablespoons olive oil

fine grain sea salt

pepper

grated parmesan cheese 

METHOD

  1. Place diced potato into a pot and fill with enough water to completely cover the potatoes. season with kosher salt and bring to a boil. Once water is boiling, cook for 8 minutes or until potatoes and fork tender.

  2. Drain potatoes in a colander and then return to the pot. Use a spoon to agitate the potatoes or put the lid on the pot and shake well.

  3. Add 2-3 tablespoons of olive oil, salt, garlic powder, and plenty of black pepper and Parmesan cheese. Mix.

  4. Place potatoes on a parchment lined baking sheet or air fryer basket and cook for 20-30 minutes or until golden brown. Garnish with more Parmesan and enjoy!
