Asian Grass-fed Beef Meatballs

INGREDIENTS

1 pound ground beef

½ cup chopped shiitake mushrooms

4 scallions, finely chopped

2 large cloves of garlic, finely chopped

2-3 teaspoons grated ginger

1 tablespoon soy sauce

1 tablespoon coconut aminos

1 tablespoon toasted sesame oil

1 tablespoon sriracha

½ cup chopped cilantro

¼ teaspoon fine grain sea salt

Black pepper to taste

To serve: jasmine/cauliflower rice and purple cabbage and carrot slaw

METHOD

  1. Preheat your oven to 425 degrees F. Line a baking sheet with parchment paper.

  2. In a bowl, combine ground beef, shiitake mushrooms, scallions, garlic, ginger, soy sauce, coconut aminos, toasted sesame oil, sriracha, cilantro, sea salt, and black pepper. Mix well with your hands.

  3. Form 2 tablespoons of the mixture into a ball and place on the baking sheet. Repeat with the remaining mixture.

  4. Bake the meatballs for 15-20 minutes, or until the internal temperature reaches 160 degrees F.

  5. Serve with rice and a cabbage-carrot slaw. Enjoy!
