Tricolore Salad with Balsamic-Marinated Tofu
SALAD INGREDIENTS
Balsamic-marinated tofu or protein of your choice
Arugula
Radicchio, thinly sliced
Cherry tomatoes, halved
Basil, julienned or torn
DRESSING INGREDIENTS
1/4 cup olive oil
2 teaspoons dijon mustard
2 tablespoons balsamic vinegar
1 tablespoon sherry vinegar, apple cider vinegar, or lemon juice
Maple syrup or honey to taste
Small clove of garlic, grated (optional)
Salt and pepper to taste
METHOD
Prepare the dressing - in a bowl or mason jar, combine olive oil, dijon mustard, balsamic vinegar, sherry/apple cider vinegar/lemon juice, maple syrup/or honey, grated garlic if using, and salt and pepper to taste. Whisk or shake well. Taste and adjust for seasoning.
In a large bowl, combine arugula, radicchio, cherry tomatoes, and basil. Toss with as much dressing as you like. Top with tofu or protein of your choice. Enjoy!
