Tricolore Salad with Balsamic-Marinated Tofu

SALAD INGREDIENTS

Balsamic-marinated tofu or protein of your choice

Arugula

Radicchio, thinly sliced

Cherry tomatoes, halved

Basil, julienned or torn

DRESSING INGREDIENTS

1/4 cup olive oil

2 teaspoons dijon mustard

2 tablespoons balsamic vinegar

1 tablespoon sherry vinegar, apple cider vinegar, or lemon juice

Maple syrup or honey to taste

Small clove of garlic, grated (optional)

Salt and pepper to taste

METHOD

  1. Prepare the dressing - in a bowl or mason jar, combine olive oil, dijon mustard, balsamic vinegar, sherry/apple cider vinegar/lemon juice, maple syrup/or honey, grated garlic if using, and salt and pepper to taste. Whisk or shake well. Taste and adjust for seasoning.

  2. In a large bowl, combine arugula, radicchio, cherry tomatoes, and basil. Toss with as much dressing as you like. Top with tofu or protein of your choice. Enjoy!
