Banana Bread Granola

INGREDIENTS

2 cups gluten-free rolled oats

1/4 cup walnut protein powder

1/2 cup coconut flakes

1/4 cup pumpkin seeds

1/2 teaspoon cinnamon

1/2 teaspoon salt

1 large banana

3 tablespoons melted coconut oil

3 tablespoons maple syrup

1 teaspoon vanilla

1/2 cup walnuts, roughly chopped

optional add-ins: dark chocolate chips, banana chips

METHOD

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. In a bowl, combine oats, protein powder, coconut flakes, pumpkin seeds, cinnamon, and salt. Mix.

  3. In a separate bowl, mash the banana and then add maple syrup, coconut oil, and vanilla. Whisk.

  4. Pour wet mixture into the dry ingredients and mix well.

  5. Spread evenly on the baking sheet and bake in the oven for 15-20 minutes, stirring halfway.

  6. Remove from oven and allow granola to cool. Then, add in chopped walnuts, dark chocolate chips, and banana chips.
