Roasted Cabbage with Olive-Walnut Gremolata

INGREDIENTS

1/2 green cabbage, cut into thick slices or wedges

olive oil

fine grain sea salt

pepper

garlic powder

1/2 cup or more chopped herbs (I used parsley and cilantro)

2 tablespoons finely chopped walnuts

6 castelvetrano olives, finely chopped

lemon zest

lemon juice

olive oil

red chili flakes

METHOD

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

  2. Place sliced cabbage onto baking sheet. Generously brush olive oil all over the cabbage and season with salt, pepper, and garlic powder.

  3. Bake cabbage in the oven for 25 minutes, or until tender and golden brown.

  4. While cabbage roasts, prepare gremolata - in a bowl, combine herbs, walnuts, and olives. Add some lemon zest and a squeeze of lemon juice. Add ~1 tablespoon of olive oil. Season with salt, pepper, and chili flakes. Mix. Taste and adjust for seasoning (it might need more olive oil).

  5. To serve, garnish each cabbage wedge with gremolata. Enjoy!
