Basil Seed Pudding

INGREDIENTS

  • 3 tablespoons basil seeds

  • 1/2 cup plain greek yogurt

  • 1/2 cup coconut water (or milk/non-dairy milk)

  • Cinnamon

  • Maple syrup or honey to taste

  • My favorite sprouted almond butter or peanut butter

  • Fruit of your choice such as berries, banana, mango, and/or stone fruit

  • I also heated up frozen wild blueberries to make a berry sauce

  • Hemp seeds and/or cacao nibs

METHOD

  1. In a glass container, combine basil seeds with greek yogurt, coconut water, cinnamon, and maple syrup/honey to taste (start with 2 teaspoons and you can always add more in the morning). Mix well. Refrigerate overnight.

  2. Before plating, taste and adjust for sweetness. If the mixture is too thick for you liking, you can thin it out with coconut water or milk.

  3. Transfer some of the pudding to a bowl and top with nut butter, more cinnamon, fruit, berry sauce, and hemp seeds/cacao nibs. Enjoy!
