Halloumi Nourish Bowl
INGREDIENTS
Halloumi, patted dry and sliced (be sure to not slice them too thin)
Honey or hot honey
Serve with roasted vegetables (I did roasted eggplant, yellow squash, and zucchini) and herby grains with crispy chickpeas, slivered almonds, and golden raisins (instead of quinoa, I did rice; I omitted the shallots; for the crispy chickpeas, I used this recipe).
METHOD
Heat up a non-stick pan with a touch of avocado oil. Add the sliced halloumi to the pan and cook for about 3 minutes on medium heat or until the underside is golden. Drizzle the top side with honey and then flip. Cook for another minute and then remove from the heat.
Serve the halloumi with the herby rice and roasted vegetables. Enjoy!
