Beef and Zucchini Bowl

INGREDIENTS

1 tablespoon olive oil

1/2 small yellow onion, diced

1/2 pound ground beef (I used grass-fed 85%/15%)

1 small zucchini, julienned

salt

pepper

garlic powder

served with steamed broccoli and parmesan roasted cabbage and potatoes

METHOD

  1. Heat up oil in a pan. Add onion and sauté until golden.

  2. Add beef and season with salt, pepper, and garlic powder. Use a wooden spoon to crumble into smaller pieces. Add zucchini and sauté until beef is cooked through.

  3. Taste and adjust for seasoning. Enjoy!
