Beef Koobideh

INGREDIENTS

1 medium onion
1 large clove garlic
1 lb 80-85% ground beef
1 teaspoon sumac
heaping 1/4 teaspoon turmeric
1 heaping teaspoon fine grain sea salt
1/2 teaspoon black pepper
1-2 tablespoons finely chopped parsley
Melted butter (optional)
Tomatoes
Jalapeños
Bell peppers
Zucchini

METHOD

  1. Blend onion using a blender or food processor and blend until smooth. Place the onion mixture in a strainer over a bowl. Reserve the juice.

  2. Place the ground beef and drained onion into a large bowl and knead well (about 5 minutes or more) until the mixture is paste like and sticks together well. Add a little juice if the mixture is too dry.

  3. Marinate in a covered bowl for 1-4 hours.

  4. Line a baking sheet with aluminum foil and place a wire rack on top.

  5. Set the oven to broil. Divide the meat mixture into 6 portions. Wet your hands with a little water and shape each ball into a kabob shape. Place the kebabs on the wire rack on top of the foil lined baking sheet.

  6. Broil for 4-5 minutes on each side about 6 inches from the broiler.

  7. When finished cooking, remove from oven and brush kabobs with melted butter (optional). Enjoy!
