Parmesan-Crusted Tofu

INGREDIENTS

1 block of extra firm tofu, cut into 8 rectangles
Olive oil
Sea salt
Freshly cracked black pepper
Garlic powder
Onion powder
Grated parmesan
Panko

METHOD

  1. Optional step - press your tofu for 15-30 minutes to remove extra moisture.

  2. Preheat your oven to 425 degrees and line a baking sheet with parchment paper.

  3. In a small bowl, combine parmesan cheese (about 1/3 cup) with cracked black pepper to taste. Mix.

  4. Place tofu slices on the parchment-lined baking sheet and drizzle with olive oil. Generously season with sea salt, garlic powder, and onion powder. Rub the oil and spices into both sides of the tofu. Transfer seasoned tofu to a plate.

  5. Divide the parmesan-pepper mixture into 8 rectangular shapes on the parchment-lined making sheets. Arrange each tofu slice on top of the parmesan. Sprinkle the top of each tofu with the remaining parmesan.

  6. In the same small bowl you used for the parmesan, add ~1/4 cup panko. Season with salt and drizzle with oil. Mix well. Top the tofu with the panko.

  7. Roast tofu for about 30 minutes or until the tops are crunchy and golden brown. Enjoy!
