Cabbage Slaw with Black Beans and Corn

INGREDIENTS

purple cabbage, thinly sliced

bell pepper, thinly sliced

cherry tomatoes, halved

scallion, thinly sliced

cilantro, roughly chopped

frozen roasted corn

cooked black beans (if using a can, drain and rinse with water)

avocado, diced

1.5 tablespoons apple cider vinegar

1 tablespoon rice wine vinegar

juice from 1/2 lime

1 tablespoon mayo (I used avocado oil mayo)

drizzle of honey

1 tablespoon olive oil

heaping 1/8 teaspoon cumin

salt and pepper

METHOD

  1. In a mason jar or bowl, combine apple cider vinegar, rice wine vinegar, lime juice, mayo, honey, oil, cumin, salt, and pepper.

  2. De-frost corn in a small pan with some water.

  3. In a large bowl, combine cabbage, bell pepper, tomato, scallion, cilantro, corn, beans, and avocado.

  4. Toss with dressing. Taste and adjust for seasoning.

  5. Enjoy!
