Boob Bites
INGREDIENTS
1/2 cup oat flour (if you need to make your own, add 1/2 cup + 2 tablespoons of oats in a food processor and blend until a powder forms)
1/2 cup gluten-free rolled oats
2 tablespoons ground flax seed
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon baking soda
3 tablespoons maple syrup
1 teaspoon vanilla extract
1.5 tablespoons coconut oil, melted
1/3 cup almond butter
1/4 cup chocolate chips
2 tablespoons dried cherries
2 tablespoons chopped pecans
METHOD
Preheat oven to 350 degrees F.
In a large bowl, whisk together oat flour, rolled oats, ground flax, salt, cinnamon, and baking soda.
In a separate bowl, whisk together maple syrup, vanilla, coconut oil, and almond butter.
Pour wet ingredients into dry mixture and mix together. Stir in chocolate, cherries, and pecans.
Use a cookie scoop to scoop batter onto a parchment-lined baking sheet.
Bake for 15-20 minutes (cookies will still be soft). Let them cool to allow cookies to become firmer.
